Do You Need to Book Restaurants in Niseko? How Reservations Work in Winter (2026-27)

If you're eating dinner in Hirafu over Christmas and New Year, yes, you need to book. Of the 27 Hirafu restaurants listed on Niseko Hub's Machinavi, 7 are marked "reservation required", the rest fill up fast at night, and you can book without Japanese through an English booking page or your hotel's front desk.

There's a way out on the nights you miss. Down the hill in Kutchan town, Machinavi lists 87 places to eat, and not one of them is marked "reservation required" (our count on 5 October 2026). You can start shortlisting by neighbourhood in Where do you find dinner in Hirafu and Kutchan? I wrote this with one reader in mind: a family staying in Hirafu between Christmas and New Year.

Why Hirafu dinners book out

There are more people than tables in the busiest months. In fiscal 2025, Kutchan, the town Hirafu belongs to, recorded about 147,000 foreign guest nights in December and about 234,000 in January (Kutchan Town tourism statistics). Meanwhile, 9 of the 27 Hirafu places on Machinavi sit in the second-highest price band or above (¥¥¥¥ and up on a five-step scale), and many of those are small omakase sushi counters with few seats. A dining guide from the accommodation company Powderlife (last updated 2021) says that over Christmas to New Year and Chinese New Year you have very little chance of finding a table in the main villages (Powderlife).

When to book: a guide by season

  • Christmas to early January: the week your flights and room are confirmed, starting with the night that matters most
  • Lunar New Year (6 February in 2027): the same, as soon as your dates are set (Hong Kong Labour Department)
  • The rest of January and February: a few days to a week ahead
  • Early December and March: often possible the day before or on the day

That list is my own rule of thumb. The same Powderlife guide says some restaurants open online bookings in September, and phone-only places often start taking winter bookings in mid-November. That was true in 2021, so check each restaurant's site for this season's opening date. Plenty of Hirafu places only open in winter, so a listing that says "temporarily closed" in October is often just waiting for the snow.

You can book without speaking Japanese

Many Hirafu restaurants have an English booking page where you can see free tables and book online. For small places that only take phone calls, asking your hotel's front desk is the quickest way. Powderlife notes that dinner staff often aren't in until around 5pm, so calls earlier in the day may go unanswered. Some places ask you to reconfirm the day before, so ask whether they'll be in touch.

When you book, tell them and check these:

  • How many people, and your kids' ages (do you need a child seat or sharing plates?)
  • Allergies or anything you can't eat
  • When a cancellation fee starts, and how much it is
  • How you can pay (cards, or cash only?)

With kids, take a table in the 5pm hour

The same guide says some restaurants run set sittings, such as 6pm and 8pm, and suggests booking the early one if you have young children who can't wait. An early table also makes the trip home easier. In the 2025-26 season the free Hirafu shuttle ran until 8pm on its evening routes in the regular period and 10pm in the extended period. Niseko HANAZONO Resort warns that taxi waits can top an hour in high season (Niseko HANAZONO Resort). Before you pick a restaurant, read Can you get back to your hotel after dinner without a car? for the buses and taxis.

On the night you arrive, the kids will be tired from travel and the time difference. How to time that first dinner is worked out hour by hour in Your family's first day in Niseko.

No booking? Head down to Kutchan

Of the 87 Kutchan town places on Machinavi, 36 are in the cheapest price band (¥) and 49 in the next (¥¥), and none are ¥¥¥¥ or above like the top end of Hirafu. It's mostly ramen, set meals and izakaya, so finding a place that takes walk-ins is easier. To get there, the free Kutchan Night Bus ran every day from 1 December to 31 March in 2025-26, roughly 5pm to 10:30pm. From 20 December to 28 February, a direct bus from the Hirafu Welcome Center to Kutchan Station at 5:30pm was added (Kutchan Tourism Association timetable PDF).

Watch the ride back. In 2025-26 the last bus from Kutchan Station to Hirafu left at 9:45pm, with no buses at all between 7:15pm and 8:15pm. The 2026-27 timetable usually comes out around November, so check the Kutchan Tourism Association once it's up. Where to eat in Kutchan at night is also covered in Where do I take first-time friends for dinner in Kutchan?

On nights when nobody has the energy to go into town, switch to your hotel's restaurant or takeaway. If your place has a kitchen, plan one night in from the start, with food from a convenience store or supermarket.

Cancellation fees, and the bill

Powderlife's guide (updated 2021) says most restaurants charge for late cancellations, typically around ¥3,000 per person inside 24 or 48 hours. Amounts and deadlines differ by restaurant, so read your confirmation email, and if you can't make it, let them know as soon as you know. Small places in Kutchan may be cash only, so carry a little cash. At izakaya, a small starter called "otoshi" may arrive first and appear on the bill; it isn't a mistake. Many places take last orders 30 minutes to an hour before closing.

How I'd plan it

For five nights over New Year, I'd book no more than two dinners in Hirafu: New Year's Eve, and one night at the place you've already set your heart on, like sushi or sukiyaki. The other nights, decide on the day depending on how tired everyone is: walk into somewhere in the 5pm hour, take the Night Bus down to Kutchan, or eat in.

For dinner in Hirafu over New Year and Lunar New Year, book ahead. For lunch, or in Kutchan town, many places take walk-ins. None of the 87 Kutchan town places on Machinavi is marked "reservation required" (as of 5 October 2026).

How far ahead should I book for New Year?

The week your flights and room are confirmed, starting with the night that matters most. Some restaurants open online bookings in September (Powderlife, as of 2021).

Are there restaurants that take walk-ins?

Yes. Go early, in the 5pm hour, or head to ramen, set-meal places and izakaya in Kutchan town. In winter the free Kutchan Night Bus runs there from Hirafu (based on the 2025-26 season).

Will I be charged a cancellation fee?

At many places, yes. Powderlife's 2021 guide put it at around ¥3,000 per person inside 24 to 48 hours. Check when it starts and how much it is when you book.
